After hotel pickup, we head to a quiet neighborhood villa with a leafy garden, far from the tourist scene. You’ll explore a nearby local market, learn how Vietnamese families buy fresh ingredients daily, and understand what’s truly safe to eat. Then, in our home kitchen, you’ll cook three authentic Vietnamese dishes, carefully adapted to be fully gluten-free—without sacrificing flavor.

1. Hotel Pickup → A Local Home in Hanoi
We’ll pick you up directly from your hotel and take you to our private villa, tucked away in a quiet neighborhood — far from the noise and crowds of the Old Quarter.

This is a real home, not a staged cooking studio. Think leafy garden, plenty of fresh air, and a café-style space where locals actually relax. Shoes off, shoulders down.

(And yes — the kitchen is fully gluten-free for the class. No shared sauces, no mystery powders, no “probably fine.”)

2. Walk to the Local Market (5 minutes)
Before cooking, we take a short walk to our nearby neighborhood market — the kind locals use every day.

Here, you’ll learn about Vietnam’s “buy today, cook today, eat today” culture:

  • Why ingredients are bought fresh daily

  • How locals choose meat, herbs, rice products, and spices

  • What looks gluten-free but actually isn’t (this part matters)

We’ll explain how to identify safe ingredients, what questions to ask vendors, and which items to avoid if you have celiac disease — useful knowledge whether you’re in Hanoi or back home.

3. Cooking: Vietnamese Flavors, Made Safely
Back at the house, it’s time to cook.

You’ll prepare three naturally Vietnamese dishes, adapted carefully to be 100% gluten-free, without sacrificing flavor. We focus on:

  • Using fresh, high-quality local ingredients

  • Balancing salty, sour, sweet, and umami — the heart of Vietnamese cooking

  • Traditional techniques, plus modern, celiac-safe adjustments

  • Practical tips to recreate these dishes at home, even if certain Vietnamese ingredients aren’t available in your country

This isn’t a rushed demo. You’ll cook, taste, adjust, and understand why each step matters.

4. Sit Down, Eat, and Chill — Hanoi Style
Once cooking is done, we sit down together in our garden-view dining space to enjoy the meal you’ve made.

Sip local Vietnamese coffee or herbal tea, ask questions, swap travel stories, or just relax under the trees. No timetable pressure, no souvenir pitch — just good food and a calm Hanoi afternoon (or evening).
